Baking with Sophie!

Hello cool peoples! Now, I like the idea of posting recipes on here, so, especially for you, I have subjected myself to making more cakes (It was hard. A real sacrifice.)! And here you have my lovely lemon drizzle fairy cake recipe! (Again, not mine.)

You will need:
For the cakes-
175g butter, softened
175g caster sugar
3 eggs, beaten
2 lemons
175g self raising flour
1 tsp baking powder
For the lemon drizzle-
150g icing sugar
50ml lemon juice

1. Preheat oven to gas mark 4/180c/350F and fill a cake tray with cake cases.

2. Assemble ingredients!

3. In a large bowl, cream the butter and sugar together until light and creamy.
4. Beat eggs separately.
4. Add eggs to creamed mixture, and mix together well.

5. Zest two lemons (until completely bald!) and juice one of them. Add the zest to the mixture and stir.

6. Stir in flour and baking powder and fold into mixture, making sure all is well combined.

7. Spoon your lurrrvely mixture into cake cases waiting patiently in the tray.
 Place in the oven. Bake for 20 - 25 minutes, or until you reckon they're properly cooked (golden and springy to the touch)

8. While they're still hot, prick cakes all over using a skewer.
9. Now you need to make your lemon drizzle!! So...
Heat your icing sugar and lemon juice in a small pan, stirring regularly - don't let it boil!
You will know it's done when it's completely clear. And now pour liberally all over your cakes.

10. This is by far the most important step. Kick back with a big full cuppa and EAAAT!

Afterword (as I feel I've typed out a full novel hear!) -
